Pineapple Upside Down Cake

Melt in an 8 inch square pan- 3 tbs.butter 1/2 cup brown sugar
Put pineapple slices on top
( I also make this cake with sliced apples)

1 1/2 cups flour
2 2/3 tsps.baking powder
1/2 tsp salt
1 cup white sugar
1/3 cup lard
3/4 cup milk
2 eggs

Preheat oven to 350 F

1) Mix lard with sugar then add eggs and salt.
2) Stir in milk.
3) Add flour and baking powder.
4) Mix until smooth.

Pour batter over top of pineapple.
Bake for 40 to 45 minutes

This cake is delicious warm or cold served with ice cream.Enjoy!
